Syria, now a worn-torn country, was once a renowned land for its generosity and warm hospitality. Come join us to celebrate this Syria of old, while reflecting on the new, with Nayran from Damascus. You'll be greeted with Middle Eastern mezza such as smokey baba ghanouj, vibrant betroot dip or creamy hummus and coffee. Nayran will then share her secrets to one of Syria's tantalizing main dishes such as Kibbeh, the national dish made of finely ground lamb or beef that is seasoned and spiced and mixed with burghul OR Mukloubi bi lahmi – upside-down lamb cake. The group will then explore making incredible Middle-Eastern salads from scratch like fattoush, fatteh or tabbouleh. Get savvy with Syrian ingredients such as baharat, sumac and rose petals as you explore the art of making decorative labneh balls. You'll also learn to make one of Syria's magical desserts filled with things like nuts, clotted cream (ashta), sugar syrup with hints of rosewater & orange blossom water

 

Syrian - Vegetarian! 


Syria, now a worn-torn country, was once a renowned land for its generosity and warm hospitality. Come join us to celebrate this Syria of old, while reflecting on the new, with Nayran from Damascus. In this class we will focus entirely on celebrating and cooking with an abundance of fresh vegetables. We'll begin with mezza and move onto exploring Syrian's best vegetarian main dishes, like a wholesome herb and four cheese baked pie. We'll create a series of salad including fattoush, fatteh, chickpea tahina, richy okra tomato salad,  or tabbouleh. Get savvy with Syrian ingredients such as baharat, sumac and rose petals as you explore the art of decorative garnishing. You'll also learn to make one of Syria's magical desserts filled with things like nuts, clotted cream (ashta), sugar syrup with hints of rosewater & orange blossom water.

Syrian Brunch

Join us for a morning cooking class where we transform seasonal produce into a traditional Syrian brunch. The morning will start with tea, coffee and Syrian cake around the shared table before we get to work creating a delightful and generous spread of Middle Eastern brunch dishes. In the Middle East breakfasts are a very big deal (trust us - they take the most important meal of the day to a whole new level). You can expect to learn how to make really authentic shakshuka (baked eggs) from scratch, you'll even blend your own capsicum paste. We'll share the many uses for the humble chickpea, including breakfast hummus with spiced lamb and fatteh. We'll rotate through many yummy mezze, and fill your morning with an abundance of fresh herbs, delicious zaatar,  labneh and freshly baked bread. After this class with Nayran, you'll be confident to host many a brunches in your kitchen!
